The chef starts by dredging salted and peppered chicken in flour, then cooking it in melted butter in a “heavy, large skillet” until it’s browned. Move the chicken to a plate, and cover it with foil to keep it warm.

In the same pan, cook minced shallots and garlic in more melted butter, “stirring to scrape up any browned bits on the bottom of the skillet.”

De Laurentiis at this point adds the wine, boiling the mixture on medium-high for about three minutes so that the liquid reduces.

The cream is stirred in and continues cooking until the sauce thickens and is reduced by half. De Laurentiis says to stir the parsley in now, returning the chicken to the skillet and covering it in the sauce.
